Located south of Aboyer & Silencieux’s main entrance at 64 Green Bay Road in Winnetka, this 18-seat dining room explodes with creativity and charm. Chef Michael Lachowicz creates a unique experience showcasing his craft and proficiency in modern French cuisine and takes guests on a culinary journey.

George Trois is a tasting experience. Offering a 12-course degustation menu, guests are transported to the French countryside with every bite.

“A calm has come over my life that is directly reflected in my cooking and throughout my entire restaurant and staff,” says Chef Michael Lachowicz. “A comfort level I’ve discovered – nothing is forced or contrived. It’s a true reflection of my take on French cooking. It’s just me and the food needs to be experienced to understand. Each and every plate comes through my hands…it is my workshop.”

The name George Trois, French for “George the Third,” is an homage to two men who inspired Michael to become a chef at a very young age, his grandfather and uncle, both named George.  This room represents the third generation of a passionate family tradition around food.

The George Trois experience is distinctive to anything offered at Aboyer or Silencieux. “In George Trois, I’ve given myself the freedom to explore and create beyond the cost restrictions in the other two restaurants,” says Lachowicz. “I get to research and procure the luxurious ingredients that simply do not fit into the cost structure of the larger room. By limiting the seating to a small and exclusive number of guests each night, I find myself able to attend to each plate with calm, meticulous and detailed vision. It’s awesome to be allowed to cook like this for my guests.”  The intimate dining room is simple elegance with a modern edge. Monochromatic white walls and chairs accented with a marble fireplace along with gold fixtures is the perfect backdrop to let Chef Michael’s food shine.

The multi-course menus are pre-designed by Chef Michael and his long time team. All items change weekly based on seasonal availability and are exclusive to George Trois guests. A full wine list is available or Wine Director and General Manager, Sergio Angel can expertly pair wine flights to guests’ experience.

In 2019, George Trois became the first-ever suburban restaurant to be named Restaurant of the Year by the Jean Banchet Awards.
